
Pumpkin Bran Muffin
History: Long-time customer Julie Fulkerson would, years ago, regularly comment, “You know, I would come in more often if you offered a healthier muffin.” Due to Julie’s and other customer’s prompting, we came up with this great tasting and good-for-you muffin.
Uses: Start your day off right with a pumpkin bran muffin and a cup of coffee. Eureka local, Tom, does just that, five days a week. Or...cut a muffin in half, add cream cheese & carrots and voilà...instant carrot cake of sorts. Yum!
Description: Moist, but not too sweet, with raisins, cinnamon, ginger, pumpkin and, of course, bran.
Ingredients: Eggs, Buttermilk, Pumpkin, Oil, Honey, Molasses, Brown Sugar, Whole Wheat Flour, Bran, Cinnamon, Baking Powder, Baking Soda, Salt, Nutmeg, Ginger and Raisins
