Gabby's Gingersnap Cookie
History: Gabby, a long-time Arcatan and river guide, who now lives in Oregon, used to bake these wonderful cookies as a special treat for fellow rafters. She was known as “Queen of reading the river”, and now she is remembered as “Queen of the best darn gingersnap recipe!”
Uses: Great for an after lunch sweet or a snack with a hearty cup of java. Spread a little peanut butter or cream cheese on top for an added twist. Kids love ’em!
Description: Moist and chewy with the perfect blend of sweet molasses and spicy ginger, topped with a sprinkle of sugar.
Ingredients: Flour, Sugar, Margarine, Eggs, Molasses, Baking Soda, Salt, Ginger, Cinnamon and Cloves
